Sometimes you need to stop planning and bake!
One of my all time favorite recipes is for Koulourakia, which are Greek butter cookies. This recipe tastes better if you mix the ingredients by hand! Soften 1/2 lb butter. Mix with 1 cup sugar add 1 whole egg and the white of another, put the yolk aside for glazing the cookies. Add 1 tsp baking powder and 3 cups of flour. (You may have to add a bit more flour as you want the dough not to stick on to your hands while you are mixing it.) Preheat your over to 350 degrees. Traditionally these cookes are rolled into a rope and then twisted to form beautiful little cookies. I have never mastered that technique so instead you can make them into little balls about the size of a meat ball, press the centers down flat-ish glaze with the egg yolk and bake somewhere between 9-13 minutes. You just want the bottoms to start to brown. They are best eaten warm, but with that much butter they taste great any time. ENJOY!!
